Bright fresh aromatics of rose petals with a smokey finish.

Spring was dry and warm, followed by the hottest and driest summer ever recorded. We started picking the sparkling grapes on 8th March 2013 and by the 20th March we were already picking some Riesling and Pinot Gris. The Pinots were picked early to mid April. The white have a good acid structure, ripe fruit and lower alcohol. The reds show good tannins structure and fruit concentration.

Yield: 5 to 6 tonnes per hectare (2 – 2.4 tonnes per acre)

Crushed and de-juiced with only slight pressure prior to cold-settling overnight. Inoculated ferment, controlled at 15˚c until the perfect balance sugar and acid is achieved, then stabilised, cross-flow filtered and bottling.
