Dark colour, fresh aromas of small red fruit. The palate is full of fruit with a balanced tannin structure. Soft and delicate wine.

Spring time 2018 was mild and dry with some cooler temperature in November. Flowering started Mid November to Finished early December. All summer, the weather was constantly warm and dry with no rain. Grape Picking started end of February for the sparkling and the end was towards the 20 April 2019.

A 48-hour pre-ferment soak was followed by inoculation and fermentation in 1/2 and 1 tonne open fermenters hand plunged twice daily. Pressed, and then transferred into French Oak for malolactic ferment, aged in barrels for 12 months.
