Raw honey aromas floral tones of Lili of the Valley. Sweet with fresh acidity. Green pear and lychees flavours.

Another wet spring due to La Niña.
No frost in October. After some good spring rain, the weather did not warm up enough at flowering to get a good bunch set. The bunches were all there but had small berries and they were also underweight. The increase of the density of the canopy resulted in an increase of workload in the vineyard. January to March were nice and warm with no extremes in weather allowing the crop to ripen nicely, resulting in excellent quality wine.

Yield: 12 tonnes per hectare (4.8 tonnes per acre)

Pressed and settled in tank, racked clear juice and stored in tanks at zero degrees. Then the juice is hard frozen to separate juice and ice. The juice is concentrated to 17.5 Baume, then fermented in tank. The fermentation is stopped when the sugar level is around 200 to 220 gr/L.
